Insalata di farro monococco con zucchine trifolate

INGREDIENTS
A package of pearl-spelled Spelled
- 300 grams of zucchini
- 200 grams of cherry tomatoes
- mint leaves
- pine nuts / almonds / sunflower seeds
- extra virgin olive oil
- salt
METHOD
- Wash and cut the courgettes into small pieces
- cook in a pan with two tablespoons of EVO oil and a clove of garlic
- at the end of cooking add the finely chopped mint and the oil seeds
- Cook the rinsed spelled in abundant cold salted water, after soaking for 12 hours, for about 5/10 min.
drain and leave to cool - add the spelled to the courgettes
- add the chopped and salted cherry tomatoes
- serve with a drizzle of raw EVO oil
