Our grains are grown in the Tuscan Maremma following the technique of rotation and the practice of green manure, respecting biodiversity and the environment, without any use of fertilizers and herbicides.

Even the legumes – grown in the land of the tuffs – in rotation to the grains, are jealously guarded by the peasant friends.

The varieties of wheat are those with gluten of medium-low strength, with a high quantity of secondary metabolites; the peculiarity of legumes instead is due both to the volcanic soil rich in potassium and to the favorable climate of the hill.
